Fresh Peach Cobbler

  • 1 1/2 Tb. cornstarch
  • 1/4 - 1/3 c. brown sugar
  • 1/2 c. water
  • 4 c. sweetened sliced peeled peaches
  • 1 Tb. butter
  • 1 Tb. lemon juice
  • Batter Topping
  • 1 Tb. granulated sugar
  • Spiced Honeyed Cream
DIRECTIONS
  1. Mix cornstarch, sugar and water. Add peaches and cook until
  2. mixture is thickened, about 15 minutes. Add butter and lemon juice. Pour into an 8" round baking dish.
  3. Drop spoonfuls of Batter Topping on top of hot peach mixture. Sprinkle with sugar. Bake in hot oven (400ºF.) 40 - 50 minutes. Serve warm, in bowls, with Spiced Honeyed Cream.
