Fresh Salsa

INGREDIENTS
- Servings: makes about 5 cups
- Preparation Time: 15-20 minutes
- 4-5 vine ripened tomatoes, chopped
- 1 sweet pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 jalapeno, seeded and chopped (add the seeds for more heat)
- 1/2 bunch cilantro, minced (about 1/2 c.)
- juice of one lime
- 1/2 t. cumin
- freshly ground sea salt to taste
- freshly ground black pepper to taste
DIRECTIONS
- Chop by hand if you are a purist, otherwise use your food processor to save time. Mix all together in a large bowl. Taste and adjust seasoning. Refrigerate for 1 hour before serving to marry flavors. Will keep several days, covered in refrigerator.
