Fresh Strawberry Pie
  • 1 9 inch pre baked pie shell
  • 1 cup sugar
  • 2 Tablespoons cornstarch
  • 1/2 teaspoon lemon juice
  • 3/4 cup water
  • 3 Tablespoons strawberry gelatin powder
  • 1 quart fresh strawberries, sliced
  • 1/4 teaspoon red food coloring
  1. Mix sugar and cornstarch together in a saucepan, stir with a whisk to combine. Add lemon juice and water. Bring to a boil over medium heat, stirring constantly. Reduce heat and cook, while stirring, until mixture thickens. Remove from heat, add strawberry gelatin and red coloring, stir till combined. Cool. Add sliced strawberries. Pour into baked pie shell, chill for 1 hour. Top with whipped topping if desired and serve.
