Fresh Tomato Salad

  • Servings: 6
  • Preparation Time: chill 2 to 4 hrs
  • 4 medium ripe tomatoes, cut into wedges (about 3 cups)
  • 1 medium sweet onion, cut into thin wedges (about 1 cup)
  • 1 medium green bell pepper, cut into thin strips (about 1 cup)
  • DRESSING
  • 3 tablespoons red wine vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon sugar
  • 1 tablespoon finely chopped fresh basil, or 1 teaspoon dried
  • 1/4 teaspoon salt
DIRECTIONS
  1. Place all of the vegetables in a shallow dish, and toss to mix.
  2. Place the dressing ingredients in a small bowl, and stir to mix. Pour the dressing over the salad, and toss to mix well.
  3. Cover the salad, and chill for 2 to 4 hours, stirring occasionally, before serving
