Fried brown rice with tofu and shrimp

  • 3 cups leftover brown rice
  • 1 cup firm tofu
  • 1 cup shrimp, cut into small pieces
  • 2 cups frozen peas
  • soy sauce to taste
  • drizzle of sesame oil (about 1/4 t)
  • 2 T sriracha hot sauce
  • 2 eggs
DIRECTIONS
  1. In large frying pan, heat rice, spreading out, and letting it form a "crust", breaking it up as you go to get lots of crunchy pieces.
  2. Add Tofu, peas, soy sauce, a drizzle of sesame oil, sriracha hot sauce and mix well.
  3. Cook until peas are defrosted and almost cooked through, then add shrimp.
  4. Push mixture to side, add beaten egg, then as egg cooks, push to side until egg is fully cooked.
  5. Once egg is cooked, make sure mixture is fully incorporated and serve hot!
RECIPE BACKSTORY
I am always looking to come up with fun things to do with leftover rice, and recently I made a mixed brown rice that had a nutty great texture I knew would be great as fried rice. Being that I also had some leftover tofu and shrimp, this has now become a dish I will be making on purpose!
