Frituras de Bacalao - Cod Fish Fritters
  • 1 pound Bacalao (salt dried and cured)
  • 4 eggs, slightly beaten
  • 6 tablespoons flour
  • 1 tablespoon Royal baking powder
  • 3 tablespoons finely diced onion
  • 2 tablespoons chopped parsley
  • ΒΌ teaspoon pepper
  • Vegetable Oil
  1. Place Bacalao is a water bath for 24 hours, changing the water 1 times.
  2. Remove Bacalao from water bath and drain. Cook Bacalao in fresh water, in a pressure cooker for 20 minutes, or until cooked thoroughly. Drain Bacalao and allow it to cool enough for you to handle. In a mixing bowl, shred the fish meat removing any skin or bones. Incorporate the remaining ingredients until well blended.
  3. In a deep fryer, or a deep sauce pan, heat vegetable oil over a medium flame. Drop small teaspoon full of Bacalao mixture into oil. Note that you can make the fritters in large teaspoon size, but I think it is much taster to have them in small bite size pieces. Continue frying until the fritters turn golden brown.
  4. Remove from oil and drain on a paper towel before serving.
