Frozen Cupcakes

INGREDIENTS
  • 1 Cup heavy cream
  • 1/4 Cup sugar
  • 2.5 T chopped nuts
  • 1.5 Cups crumbled cake (think leftover, scrape off the icing)
  • 1/16 tsp salt
  • 1/2 tsp vanilla1 T maraschino cherry juice
  • 3 T chopped marischino cherries
  • 1 T minced candied ginger
  • Garnish:
  • 3 T chopped marischino cherries
  • 1 T minced candied ginger
DIRECTIONS
  1. Whip cream til stiff.
  2. Fold in the next 7 ingredients, gently, but thoroughly.
  3. Spoon into cupcake liners, top with garnish and freeze.
  4. Makes 4-5 cupcakes.
  5. Makes nice gems for a party also
