Frozen Pineapple Salad

  • Servings: 8
  • 1 cup pineapple juice
  • 2 tbsp flour
  • 2 tbsp butter
  • 1 tbsp sugar
  • A pinch of salt
  • 1 egg
  • 2 tbsp lemon juice
  • 4 slices pineapple, cut fine
  • 2 oranges sliced
  • 1/4 cup nuts (pecans)
  • small marshmallows
  • 8 maraschino cherries
  • 1/2 pint whip cream
DIRECTIONS
  1. Make paste of flour and pineapple juice, gradually add remainder of juice.
  2. Add butter, sugar, salt and cook in double boiler for about 10 minutes.
  3. Add egg, slightly beaten - continue cooking for a few minutes, stirring continuously.
  4. Cook and add lemon juice, pineapple, orange, nuts, marshmallows, cherries.
  5. Fold in whipped cream.
  6. Freeze in refrigerator tray.
