Fruit Cocktail Cake

  • 2 cup self rising flour (or 2 cups flour plus 1 1/2 tsp baking powder and 1/2 tsp salt)
  • 1 1/2 cup sugar
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 2 whole eggs slightly beaten
  • 1 can fruit cocktail with syrup
  • 3/4 cup sugar
  • 1/2 cup evaporated milk
  • 1/2 cup butter
  • 1 tsp vanilla
  • 1 cup walnuts
  • 1 cup shredded coconut
  1. Cake Batter:
  2. Sift together the dry ingredients (flour, sugar, soda, salt and baking powder if substituting for self-rise flour).
  3. In a separate bowl slightly beat the eggs and add the fruit cocktail, stirring well.
  4. Combine the wet with the dry ingredients mixing well, then pour into a greased and floured 9x13 baking pan.
  5. (Optional: Sprinkle 1/2 cup brown sugar and 1/2 cup walnuts over the batter before baking.)
  6. Bake 350 degrees F for 30 minutes.
  7. Cool slightly in pan while making topping.
  8. Topping:
  9. Combine sugar, milk, butter, and vanilla in a saucepan and bring to a boil. Boil for 2 minutes and then add walnuts and coconut.
  10. Pour the topping over the cake as evenly as you can and finish cooling.
This is one of those old time favorites that came out of Momma's kitchen, and just the name of the recipe takes me back to another time. This is such a delicious & sweet down home cake that I remember so well. ~Thanks to JustaPinch for the middle layer idea and the photo!
