Fruit Cocktail Cake

  • Cake
  • 1 1/2 C. sugar
  • 2 C. flour
  • 2 eggs
  • 2 C. Fruit Cocktail with juice
  • 2 tsp. baking soda
  • dash salt
  • 1/2 C. brown sugar
  • Icing
  • 1 stick of butter
  • 3/4 C. sugar
  • 1/2 C. Evaporated Milk
  • 3/4 C.- 1 C. nuts (I prefer walnuts)
  • 1/2 C. coconut
  • 2 tsp. vanilla
DIRECTIONS
  1. Mix all cake ingredients together, except brown sugar, and pour into a greased 9 x 13 pan. Sprinkle the brown sugar over the top of the batter. Bake at 350 for 35 minutes.
  2. Combine all icing ingredients except the vanilla and boil in a saucepan for 4 minutes. Add vanilla and pour over warm cake

This is a recipe from a sweet lady from my church...it is the most moist cake I have ever eaten!
