Fruit Salad with Pudding

INGREDIENTS
- 2 cans, medium size, sliced peaches, drained, rinsed
- 2 cans, small, mandarin orange slices, drained, rinsed
- 2 cans pineapple chunks, drained but reserve the juice
- 1-4 oz. Sugar Free/Fat Free instant lemon pudding
- 1-4 oz. Sugar Free/Fat Free instant vanilla pudding
- Fresh strawberries, sliced
- Bananas, sliced
DIRECTIONS
- Mix the two puddings with the juice from the pineapple - stir in the oranges, pineapple and peaches.
- Refrigerate for at least two hours. Before serving, stir in the sliced strawberries and banana.
- We love this recipe at our house because it's so refreshing. It's also a good way to get in some extra servings of fruit. It makes a large batch but it will keep easily for 2-3 days.
- I usually portion some out for serving and add the strawberries and bananas to the smaller portion, otherwise the bananas turn mushy and brown.
