Fruit and nut couscous
  • 1 box "Near East" Toasted Pine Nut couscous
  • 1/3 cup raisins
  • 1/4 cup dates, chopped
  • 1 1/4 cup vegetable broth
  • 3 Tbs unsalted butter
  1. Bring contents of seasoning packet and vegetable broth to a boil. Add butter and fruit and cook for 2 minutes. Remove from heat and stir in dry couscous and let sit, covered, for 5 minutes.
