Fruitcake Cookies

  • 1/2 cup shortening
  • 1 1/2 cup brown sugar, packed
  • 2 eggs, beaten
  • 2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp ground cloves
  • 2 cups golden raisins
  • 2 cups diced mixed candied fruit
  • Optional: 1 1/2 cups chopped nuts
  • 1/2 cup evaporated milk
  • 2 tsp vinegar
DIRECTIONS
  1. Blend together the shortening and the brown sugar.
  2. Beat in the eggs.
  3. In a separate bowl, mix together the flour, baking soda, salt, and the spices.
  4. Mix well.
  5. Stir in the raisins, fruit, and the nuts, if using.
  6. Add to the shortening mixture along with the milk and vinegar.
  7. Mix well.
  8. Drop by teaspoonfuls onto greased baking sheets.
  9. Bake at 325 F for 20-25 minutes.
