Funeral Potatoes
INGREDIENTS
  • 1 pkg. frozen hash brown cubes
  • 1 can cream of chicken soup
  • 1 med. container sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped onion
DIRECTIONS
  1. Method:
  2. Put frozen potatoes in the bottom of a greased casserole pan. In a separate bowl mix cream of chicken soup, sour cream, cheddar cheese and chopped onion. Spread this mixture over the potatoes (think frosting). Bake at 350 for 45 minutes.
  3. The recipe I have suggests making a crispy crust with 1/2 cup melted butter and 1 cup corn flakes. Spoon this mixture over the soup, sour cream, cheese, onion mixture. I've never done that part so I couldn't tell you how it tastes.
RECIPE BACKSTORY
These potatoes always show up at a 4th of July celebration at a family friend's house. We call them Jana's Potatoes. Someone else called them Funeral Potatoes because they were always at funeral receptions at a church. Either way they are yummy and super easy. These are great for potlucks or big family gatherings.
