GAI MEI BAO (CHINESE BREAKFAST PASTRY)
INGREDIENTS
  • Bread Dough
  • 1 lb of bread flour
  • 1 ½ eggs
  • 4 tsp of yeast
  • ¾ cup warm water
  • 2 tbsp milk
  • 3 tbsp oil
  • 3 ½ oz sugar
  • Filling:
  • 3 oz butter
  • 4 oz sugar
  • 1 ½ oz of coconut
  • 1 oz flour
  • 2 oz cornstarch
  • 2 tbsp milk
  • ¼ tsp vanilla extract
  • Topping:
  • 1 oz plain flour
  • 1 ½ oz soft butter
  • 1/2 oz of sugar
DIRECTIONS
  1. PREPARATION
  2. Make dough and place in glass bowl and cover with cheesecloth. Allow dough to rise until it is in double inside (usually 4 hours) Knead out dough (do not roll!) and divide into 24 equal parts.
  3. Make filling, keep them cool.
  4. Assemble bun with filling making sure you seal the opening well
  5. Pipe 3 thin lines of topping on each end of the dough
  6. Bake at 350 F for about 25 minutes. If it is starting to get too brown turn down temperature
  7. Glaze with sugar syrup well done.
