GF French Bread

  • Preparation Time: 10-15 minutes plus 1 hour rising time
  • 1 1/2 c. very warm water (if water has any sting to the touch, it is too hot)
  • 1 T. sugar
  • 1 1/2 t. freshly ground sea salt
  • 2 T. olive oil
  • 1/2 c. + 1 T. egg whites
  • 2 T. dry active yeast
  • 2 c. white rice flour
  • 1 c. tapioca flour
  • 1 T. zanthum gum
  • 1 t. white vinegar
DIRECTIONS
  1. In bowl of stand mixer pour in very warm water and start beating on low speed. Add sugar, salt, olive oil, and egg whites and beat briefly. Add yeast and beat briefly. Turn off mixer and add flours, vinegar, and zanthum gum. Stir by hand until moistened, then turn on mixer and beat for a minute on medium speed. Divide dough into two parts and put each part into a French bread pan (or make your own by taking two foil bread pans, cut the ends off, and put them together to create a long pan) that is lined with parchment paper. Smooth the dough and slash the top with a sharp knife. Let rise in a warm place for about an hour or until doubled. Bake in an oven preheated to 400F for 45 minutes. Remove from pans to wire rack to cool completely. To make garlic bread slice the bread in 1" slices, brush with olive oil, and sprinkle with minced garlic. Put slices on parchment lined baking sheet bake in 400F oven until toasty. To make croutons, slice the bread into 1 " squares before baking. Cool before adding to salad.
