GF Vanilla Wafer

  • Servings: Makes 64 wafers
  • Preparation Time: 20-30 minutes
  • 1 stick butter, softened
  • 1/2 c. confectioner's sugar
  • 1/4 c. sugar
  • 1/4 c. milk
  • 1 1/2 t. vanilla
  • 1/2 t. slat
  • 1 t. zanthum gum
  • 1 1/2 c. GGFG Baking Mix (or baking mix of choice)
  1. Cream butter in bowl of stand mixer or use hand mixer. Add sugars, beat until fluffy, then add milk and vanilla. Beat lightly. Turn off mixer, add salt, zanthum gum, and baking mix; stir by hand to moisten, then beat very briefly. Form dough into ball, divide in half, then divide each half in half again, then half again to form 8 balls. Form each of the eight balls into 8 small balls and flatten into a thin circle onto a baking sheet. Bake in an oven preheated to 350F for 20 minutes, cool for 2 minutes then remove to wire rack to cool completely. Freezes well to keep on hand for making desserts.
These vanilla wafers are great to keep on hand to use in making banana pudding, they also are great to use for making a cookie pie crust.
