GINGERBREAD(LAURA INGALLS WILDER)

- 1 c. brown sugar
- 1/2 c. lard
- 1 c. molasses
- 2 tsp. baking soda
- 1 c. boiling water
- 3 c. flour
- 1 tsp. ginger
- 1 tsp. cinnamon
- 1 tsp. allspice
- 1 tsp. nutmeg
- 1 tsp. cloves
- 1/2 tsp. salt
- 2 eggs, beaten
- raisins or chocolate chips
DIRECTIONS
- Blend sugar, lard and molasses. Add baking soda and boiling
- water. Be
- sure the cup is full of water after foam is
- run into cake mixture.
- To flour, add spices and salt, then
- blend into rest of mixture. Add 2 beaten eggs, raisins or
- chocolate
- chips.
- Bake for 30 minutes in 350 degrees oven (use 9 x 13-inch pan).
