GOLDEN FISH CAKES

  • 3 slices whole wheat bread
  • 1 pkg (400 g) frozen fish fillets (tilapia, cod, sole or haddock), thawed
  • 1 egg
  • 2 green onions, thinly sliced
  • 1 stalk celery, minced
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 tbsp. oil
DIRECTIONS
  1. In a food processor pulse bread to make 2 cups of crumbs. Transfer to a bowl.
  2. Add fish to food processor and finely chop; add to bowl.
  3. Add egg,onions, celery, salt and pepper to the bowl; mix well.
  4. Using wet hands shape by heaping 1/4 cups into eight 1/2 inch thick patties. (can be made to this point and refrigerated for up to 24 hours-covered).
  5. In a nonstick skillet, heat oil over medium heat; fry patties, turning once, until golden, about 10 minutes.
