GOLDEN FISH CAKES

INGREDIENTS
- 3 slices whole wheat bread
- 1 pkg (400 g) frozen fish fillets (tilapia, cod, sole or haddock), thawed
- 1 egg
- 2 green onions, thinly sliced
- 1 stalk celery, minced
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 tbsp. oil
DIRECTIONS
- In a food processor pulse bread to make 2 cups of crumbs. Transfer to a bowl.
- Add fish to food processor and finely chop; add to bowl.
- Add egg,onions, celery, salt and pepper to the bowl; mix well.
- Using wet hands shape by heaping 1/4 cups into eight 1/2 inch thick patties. (can be made to this point and refrigerated for up to 24 hours-covered).
- In a nonstick skillet, heat oil over medium heat; fry patties, turning once, until golden, about 10 minutes.
