Gado Gado

INGREDIENTS
- vegetable suggestions:
- spinach leaves
- cucumbers
- shredded lettuce
- green beans
- carrots
- boiled potatoes
- bean sprouts
- hard boiled eggs
- fried tofu
- Sauce:
- 1 cup of chopped onion
- 6 cloves of minced garlic
- 3 T. of oil
- 1 cup of boiling water
- 2 cups of crunchy peanut butter
- 2 T. of honey
- 1 t. of Tabasco
- 1 T. of lemon juice
- 1 T. of fresh ginger
- 3 cups of milk
- Shrimp chips (optional)
DIRECTIONS
- Gather an assortment of veggies both raw or lightly cooked, and place in a salad bowl.
- To make the sauce: Sauté onion and garlic in oil.
- Stir in boiling water, peanut butter, honey, Tabasco, lemon juice and ginger.
- Cook sauce over medium heat until hot and peanut butter is melted.
- Gradually stir in milk.
- Serve the sauce over the veggies.
- Shrimp chips are the classic accompaniment.
