Ganache Filled Quadruple Chocolate Cupcakes
INGREDIENTS
- 2 cups All-Purpose Flour
- 2 cups Sugar
- 1/2 cup Cocoa Powder
- 2 tsp Baking Soda
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 1 cup Vegetable Oil
- 2 Eggs
- 2 cups of Butter Milk
- 2 teaspoons Vanilla
- 2 ounces of Unsweetened Chocolate
- Ganache Filling
- 1 cup of Bittersweet or Semisweet chocolate (I used chocolate chips)
- 3/4 cup of Heavy Cream
- 2 tablespoons of butter/margarine
DIRECTIONS
- Chocolate Cupcakes
- 2 cups All-Purpose Flour
- 2 cups Sugar
- 1/2 cup Cocoa Powder
- 2 tsp Baking Soda
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 1 cup Vegetable Oil
- 2 Eggs
- 2 cups of Butter Milk
- 2 teaspoons Vanilla
- 2 ounces of Unsweetened Chocolate
- 1. Preheat oven to 350 degrees
- 2. Line muffin tin with cupcake/muffin liners
- 3. Mix together flour, sugar, cocoa powder, baking soda, baking powder and salt.
- 4. Melt chocolate
- 5. Add eggs, oil, buttermilk, vanilla and chocolate - mix until combined.
- 6. Spoon mix into liners 2/3 full.
- Bake for 20-25 minutes or until tooth pick comes out clean.
- Ganache Filling
- 1 cup of Bittersweet or Semisweet chocolate (I used chocolate chips)
- 3/4 cup of Heavy Cream
- 2 tablespoons of butter/margarine
- Heat heavy cream and butter together, bring to a boil. Poor the heavy cream over chocolate and leave for five minutes. Stir the chocolate until combined completely, as it should be melted by the cream. For the filling consistency I wanted - I put the ganache in the refrigerator in order for it to firm up.
- Once the cupcakes are out of the oven and cooled, take a sharp knife and cut the top of the cupcake in the shape of a triangle. Fill cupcakes with ganache and cut off (or eat :P) the bit of cake on the top you cut off so the cake does not stick up when you put the top back on.
- I then quickly whipped up some white chocolate butter cream icing, piped it on and topped the cupcakes with a piece of Hershey's Milk Chocolate to complete the "Quad" in Quadruple Chocolate Cupcakes :)
- I thought that the sweet white chocolate buttercream paired with the ganache balanced each other out perfectly - helping to make it the chocolate lovers dream!
