Ganache Filled Quadruple Chocolate Cupcakes

  • 2 cups All-Purpose Flour
  • 2 cups Sugar
  • 1/2 cup Cocoa Powder
  • 2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 cup Vegetable Oil
  • 2 Eggs
  • 2 cups of Butter Milk
  • 2 teaspoons Vanilla
  • 2 ounces of Unsweetened Chocolate
  • Ganache Filling
  • 1 cup of Bittersweet or Semisweet chocolate (I used chocolate chips)
  • 3/4 cup of Heavy Cream
  • 2 tablespoons of butter/margarine
DIRECTIONS
  1. Chocolate Cupcakes
  2. 2 cups All-Purpose Flour
  3. 2 cups Sugar
  4. 1/2 cup Cocoa Powder
  5. 2 tsp Baking Soda
  6. 1 tsp Baking Powder
  7. 1/2 tsp Salt
  8. 1 cup Vegetable Oil
  9. 2 Eggs
  10. 2 cups of Butter Milk
  11. 2 teaspoons Vanilla
  12. 2 ounces of Unsweetened Chocolate
  13. 1. Preheat oven to 350 degrees
  14. 2. Line muffin tin with cupcake/muffin liners
  15. 3. Mix together flour, sugar, cocoa powder, baking soda, baking powder and salt.
  16. 4. Melt chocolate
  17. 5. Add eggs, oil, buttermilk, vanilla and chocolate - mix until combined.
  18. 6. Spoon mix into liners 2/3 full.
  19. Bake for 20-25 minutes or until tooth pick comes out clean.
  20. Ganache Filling
  21. 1 cup of Bittersweet or Semisweet chocolate (I used chocolate chips)
  22. 3/4 cup of Heavy Cream
  23. 2 tablespoons of butter/margarine
  24. Heat heavy cream and butter together, bring to a boil. Poor the heavy cream over chocolate and leave for five minutes. Stir the chocolate until combined completely, as it should be melted by the cream. For the filling consistency I wanted - I put the ganache in the refrigerator in order for it to firm up.
  25. Once the cupcakes are out of the oven and cooled, take a sharp knife and cut the top of the cupcake in the shape of a triangle. Fill cupcakes with ganache and cut off (or eat :P) the bit of cake on the top you cut off so the cake does not stick up when you put the top back on.
  26. I then quickly whipped up some white chocolate butter cream icing, piped it on and topped the cupcakes with a piece of Hershey's Milk Chocolate to complete the "Quad" in Quadruple Chocolate Cupcakes :)
  27. I thought that the sweet white chocolate buttercream paired with the ganache balanced each other out perfectly - helping to make it the chocolate lovers dream!
