Garlic Mashed Potatoes
  • Cooking Time: 20-30 minutes.

  • 6 large Red or Yukon gold potatoes
  • 2-3 cloves garlic, minced (or to taste)
  • 3 T. butter (or DF butter)
  • milk or half and half as need for consistency (DF use chicken broth_)
  • freshly ground sea salt and freshly ground black pepper to taste
  1. Peel and quarter potatoes, put in saucepan and cover with water. Add 1 t. salt. Bring to boil over high heat, when boiling lower heat to medium and cook 15-20 minutes until potatoes are tender. Drain potatoes in colander. Put saucepan back on heat turned to medium and add 1 T. butter. Saute garlic for a minute or until beginning to brown. Add potatoes back to pot, stir into garlic and allow potatoes to dry out for a minute or two. Turn heat to low and add butter and milk or half and half and start mashing potatoes with a potato masher. Add milk or half and half as needed to obtain consistency you desire. Taste to adjust seasoning, adding salt and pepper to taste. Serve immediately.
Our family likes garlic mashed potatoes because we really like garlic. It is especially nice when we have leftover roasted garlic. Particularly nice with beef.
