Garlic Scape Pesto

  • A large bouquet of garlic scapes (about 3 pounds)
  • 1-2 olive oil cups (you can cut oil up to 1/2 or a bit more and add water instead)
  • ¾ cup Parmesan cheese (optional- I always leave this out)
  • 1 cup finely chopped nuts (or pine nuts, almonds, sunflower seeds ...) (optional)
  • Salt, to taste
  1. If you have time, I recommend blanching the garlic scapes first - put them in boiling water for 30 seconds (this improves the color and texture of the pesto but I rarely do it). Add garlic scapes to the food processor with olive oil and grind until you are satisfied with the texture. Add salt to taste.
