Garlic Spinach with Toasted Pine Nuts

INGREDIENTS
- 3 tablespoons olive oil
- 1/2 small yellow onion, chopped
- 3 cloves garlic
- 2 bunches spinach
- 3 tablespoons toasted pine nuts
- 1 tablespoon fresh lemon juice
- 8 thin strips lemon zest
- salt and pepper to taste
DIRECTIONS
- Heat oil. Add onions and garlic. Saute for 5 minutes. Add spinach and cook for 1 minute. Add pine nuts, lemon juice and zest. Cook three minutes. Season with Salt and pepper.
