Garlic Spinach with Toasted Pine Nuts

INGREDIENTS
  • 3 tablespoons olive oil
  • 1/2 small yellow onion, chopped
  • 3 cloves garlic
  • 2 bunches spinach
  • 3 tablespoons toasted pine nuts
  • 1 tablespoon fresh lemon juice
  • 8 thin strips lemon zest
  • salt and pepper to taste
DIRECTIONS
  1. Heat oil. Add onions and garlic. Saute for 5 minutes. Add spinach and cook for 1 minute. Add pine nuts, lemon juice and zest. Cook three minutes. Season with Salt and pepper.
