Garlicky White Beans With Spinach And Red Onion
  • 2 Tbs olive oil
  • 1 Red onion sliced
  • 2 cloves of garlic minced
  • 2 bunches of spinach, You can rough chop if desired.
  • 2(15-oz) cans of Cannelini beans, rinsed and drained
  • 2 Tbs Balsamic vinegar
  • salt and pepper to taste
  1. aute the onion in the olive oil
  2. Season with salt and pepper. Cook for about 2 minutes. Add the garlic and cook for another minute or two. Add the beans and heat through. Add the spinach and the balsamic vinegar. Adjust the seasonings and cook till the spinach wilts.
  3. A few additions if desired
  4. Add a pinch of brown sugar to the onions while cooking.
  5. Top the finished dish off with some cooked and crumbled bacon.
