Gaudrey's Onion Pie
INGREDIENTS
  • 10 inch pie shell
  • 3 cups sliced onions
  • 3 tablespoons butter or margarine
  • 3/4 cup milk
  • 1 cup small curd cottage cheese
  • 1 cup sour cream, not low fat
  • 1 teaspoon salt
  • 1/8 teaspoon Lemon Pepper
  • 3 eggs, beaten
  • 1 tablespoon flour
  • 1/4 cup milk
  • 1/2 cup grated sharp cheddar cheese
DIRECTIONS
  1. Heat oven to 425°. Bake pie shell just until it begins to brown, about 8 to 10 minutes. Set aside. Reduce heat to 350°. Cook onions in butter or margarine until tender and light golden brown. Spread in pie shell. Combine 3/4 cup milk, cottage cheese, sour cream, salt, pepper, and eggs. Blend well. Pour over onions. Combine flour and 1/4 cup of milk thoroughly. Drizzle over pie. Scatter cheese evenly over the top. Bake until the center is set and top is lightly browned, about 30 minutes.
