Gen's Arugula Pesto
  • Servings: Makes about 2 cups
  • Preparation Time: 5 min
  • 2 cups of arugula, packed
  • 1/8 cup of oil, or to taste
  • 1/8 cup of water, or more, if needed
  • 2 garlic scapes, chopped (or 1 small garlic clove, peeled and chopped)
  • 1/2 teaspoon salt
  • 2 Tbsp of lemon juice
  1. Purée all ingredients in a food processor. Serve!
FEATURING: Arugula and garlic scapes (or garlic). An easy recipe we make by eyeballing things according to our taste at the moment. You can add 1/2 cup of nut of your choice (ex: walnuts or pine nuts) and or up to 1/2 cup of crumbled tofu or parmesan. We just rarely do these days and we love it just as much! Great served on pasta, in sandwiches and wraps, on crackers, on roasted/grilled veggies and/or potatoes, pizzas, stir fries, soups, etc.
