Georgia Pecan Chocolate Chip Cheesecake Bars
  • Crust:
  • 1 cup all-purpose flour
  • 1/3 cup firmly packed light brown sugar
  • 1/2 cup unsalted Butter, softened
  • 1/2 cup pecans, toasted and chopped
  • Filling:
  • 8-ounce package cream cheese, softened
  • 1/3 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon almond
  • pinch of salt
  • 1 cup mini semi sweet chocolate chips or chocolate chunks
  1. Heat oven to 350°F. Make the crust: Combine flour, brown sugar and butter in large bowl. Beat at low speed until mixture resembles coarse crumbs. Stir in pecans by hand. Reserve 1 cup crumb mixture; set aside. Press remaining crumb mixture onto bottom of ungreased 8-inch square baking pan. Bake for 12 to 15 minutes or until lightly browned.
  2. While the crust is baking, make the filling: Beat soft cream cheese until fluffy, slowly add sugar until well blended. Stir in egg, vanilla, almond and salt. Fold in chocolate chips. Spread filling over hot, partially baked crust. Sprinkle with reserved crumb mixture. Return to oven and bake for 30 to 40 minutes or until filling is set. Cool completely; cut into bars. Store refrigerated.
