German Pancakes
  • 1/2 stick of butter, split
  • 4 eggs
  • 1 cup milk
  • 1 cup flour
  • Powdered sugar & lemon juice
  1. Preheat oven to 450 degrees.
  2. Grease two pie plates (or casseroles) with Pam and then add 1/4 stick of butter to each pan. Place in oven to melt butter.
  3. Mix other ingredients while butter is melting.
  4. Beat eggs in stand mixer or blender, add milk while mixer is running, and then slowly add the flour.
  5. Once this is evenly blended, pour 1/2 the mixture into each pan over the melted butter.
  6. Bake in the oven for 20 minutes, or until pancakes are golden brown. They will rise somewhat in the oven, and will fall once out.
Once the pancakes are done, sprinkle the tops with powdered sugar and then splash some lemon juice over that. You could also substitute whipped cream and fresh berries for topping if you prefer.
