German Sweet Chocolate Cake (Mary Lust)

- Cooking Time: 30-40 minutes
- Cake:
- 1 pkg German Sweet chocolate (4 oz)
- ½ C boiling water
- 1 C butter
- 2 C sugar
- 4 egg yolks, unbeaten
- 1 tsp vanilla
- 2-½ C sifted cake flour
- 1 tsp baking soda
- 1 tsp salt
- 1 C buttermilk
- 4 egg whites, stiffly beaten
- Frosting & Filling:
- 1 C evaporated milk
- 1 C sugar
- 3 egg yolks
- 1 tsp vanilla
- 1-1/3 C coconut
- 1 C chopped nuts
DIRECTIONS
- Cake:
- Melt chocolate in boiling water.
- Mix and Cool.
- Cream butter and sugar until fluffy.
- Add yolks, one at a time, and beat well after each.
- Add melted chocolate and vanilla.
- Mix well.
- Sift together flour, salt and soda.
- Add alternately with buttermilk to chocolate mixture, beating until smooth after each addition.
- Fold in beaten egg whites.
- Pour into three 8" or two 9" round layer pans lined on bottom with paper.
- Bake at 350 degrees for 30-40 minutes.
- Cool.
- Frost tops only.
- Frosting & Filling:
- Combine and cook evaporated milk, sugar, egg yolks, and vanilla, stirring until thickened (about 12 minutes).
- Add coconut and chopped nuts.
- Beat until thick enough to spread.
