Ginger Carrot Soup

  • 3 large carrots
  • 1 teaspoon minced ginger or ginger root
  • 1 cup water, soy milk or other liquid
  • 1/2 veggie broth bouillon cube
  1. Combine all ingredients in the Vitamix. Turn Vitamix on high for about 5 minutes, until steaming hot and creamy.
  2. Serve and enjoy!
