Gingerbread Energy Balls - raw vegan
INGREDIENTS
  • Servings: 12
  • Preparation Time: 15-20 minutes
  • 1/2 cup raw cashews
  • 1/2 cup shredded coconut
  • 1/4 cup raw almonds
  • 1/2 cup soft pitted dates (6)
  • 1/2 tsp vanilla powder
  • --or 1 tsp vanilla extract
  • 1 tsp coconut oil
  • 1" chunk of fresh ginger rough chopped
  • 1 tsp water
  • pinch of salt
  • coconut and ginger powder for coating
DIRECTIONS
  1. Process all ingredients except for the water in a food processor.
  2. When mixture resembles a fine meal, add the water.
  3. Incorporate the water at low speed.
  4. Scoop about 1 Tbsp of the mixture, press together and roll into a ball.
  5. Roll the ball in the coconut ginger powder and coat well.
  6. Store in fridge or freezer.
