Gingerbread with Lemon Glaze

INGREDIENTS
  • 1 2/3 cup flour
  • 1 1/4 teaspoon baking soda
  • 1 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1/2 cup sugar
  • 1/2 cup molasses
  • 1/2 cup boiling water
  • 1/2 cup canola oil
  • For Glaze:
  • 2/3 cup sifted confectioner's sugar
  • 3 tablespoons lemon juice
DIRECTIONS
  1. Preheat oven to 350 degrees.
  2. Lightly oil a 9 inch cake pan, then dust with flour.
  3. Shake off excess.
  4. Mix dry ingredients.
  5. Mix in beaten egg, sugar, and molasses.
  6. Add oil and boiling water.
  7. Stir until smooth.
  8. Bake for 35-40 minutes.
  9. Stir the lemon juice and confectioner's sugar until dissolved.
  10. Brush over gingerbread immediately after it is removed from the oven.
  11. Makes 12 servings.
