Glazed Carrots with Kalhua

INGREDIENTS
  • 3 cups carrots, diagonal cut
  • 1 Tbsp butter
  • 1 Tbsp brown sugar
  • 1 Tbsp honey
  • 3 Tbsp Kahlua (divided)
  • 1 tsp cornstarch
  • ¼ tsp salt
  • 1 tsp parsley
DIRECTIONS
  1. 1 Cook carrots in microwave on high for 3 minutes or until tender.
  2. 2 Melt butter in skillet then add brown sugar, honey, and 2 Tbsp Kahlua; cook until bubbly.
  3. 3 Combine 1 Tbsp Kahlua with cornstarch, and then add to skillet.
  4. 4 Add salt and carrots, tossing well.
  5. 5 Heat only – do not let carrots cook more (they get tough).
  6. 6 Stir in parsley and serve.
