Gluten & Dairy Free Pumpkin Pie Muffins
INGREDIENTS

  • 3 cups of oat flour
  • 1 15 oz can of pumpkin puree
  • 1 cup packed brown sugar
  • 2 tsp of baking powder
  • 1 tsp of baking soda
  • 1 1/2 tsp of cinnamon
  • 1 tsp of nutmeg
  • 1/2 tsp of ground ginger spice
  • 1/2 tsp of cloves
  • 1/2 tsp of salt
  • 4 eggs
  • 1/2 cup of honey
  • 1/2 cup of apple sauce
  • 1/2 cup of vegetable oil
  • optional: chocolate chips or walnuts
DIRECTIONS
  1. 1. Preheat the oven to 350 degrees F (175 degrees C).
  2. 2. Mix all the dry ingredients in a large bowl, stir with a fork then add all the wet ingredients with a spatula until they are combined together well.
  3. 3. Spoon batter into 12 paper-lined or greased muffin cups, filling the cups 3/4 full.
  4. 4. Bake 22-25 minutes or until fork or toothpick inserted in a muffins's center comes out clean.
