Gluten/lactose free Strawberry Souffle

  • 15 g butter
  • 250 g strawberries, pureed
  • 100 g caster sugar
  • 1 tbsp kirsch (optional)
  • 4 egg whites
  1. Preheat oven to 190/375, gas mark 5
  2. Grease inside of 4 ramekins with the butter and coat with a small amount of sugar. Place in fridge.
  3. Whisk the egg whites until stiff peaks form, fold in the sugar, puree and kirsch. Place in ramekins and run your finger around the edge of the dish.
  4. Place in ramekins and cook for 12-14 minutes until set
  5. Remove and serve immediately
I have had this recipe for years and used to make it regularly. I can't even remember where i got the recipe from. I am now going through my old typed out recipes and putting them on here as it far easier to find them and redid it. Since i originally made it, I have watched a skills test on a certain cooking competition on TV and found a couple of tips, hence the amount of rise on this one. I remembered why I liked it. It is delicious!
