Gluten Free Cornbread
  • Cooking Time: approximately 25 minute bake time

  • Preparation Time: 10-15 minutes
  • 1 1/4 c. GGFG Baking Mix (or mix of your choice)
  • 3/4 c. cornmeal
  • 1 t. zanthum gum
  • 1/4 c. sugar
  • 2 t. baking powder
  • 1/2 t. salt
  • 1 c. milk
  • 1/4 c. oil
  • 1 egg
  • For Cheesy Corny Cornbread:
  • 1 can whole corn or frozen corn
  • 1 c. shredded sharp cheddar
  1. In a bowl, mix all dry ingredients together well. In a small bowl, mix together milk, oil, and egg. Stir wet ingredients into dry ingredients. If making Cheesy corny cornbread, stir in corn and cheese. Pour into a 8"X8" parchment lined pan and bake in an oven preheated to 425F for 25 minutes or until golden brown and knife comes out with moist crumb.
Cornbread is a favorite to go with fried fish or chicken.
