Gluten Free Cornbread

- 1 1/4 c. GGFG Baking Mix (or mix of your choice)
- 3/4 c. cornmeal
- 1 t. zanthum gum
- 1/4 c. sugar
- 2 t. baking powder
- 1/2 t. salt
- 1 c. milk
- 1/4 c. oil
- 1 egg
- For Cheesy Corny Cornbread:
- 1 can whole corn or frozen corn
- 1 c. shredded sharp cheddar
DIRECTIONS
- In a bowl, mix all dry ingredients together well. In a small bowl, mix together milk, oil, and egg. Stir wet ingredients into dry ingredients. If making Cheesy corny cornbread, stir in corn and cheese. Pour into a 8"X8" parchment lined pan and bake in an oven preheated to 425F for 25 minutes or until golden brown and knife comes out with moist crumb.
