Gluten Free Golden Vegetable Soup

  • 1 tbsp olive oil
  • I onion, chopped
  • 1 garlic clove, chopped
  • 1 carrot, chopped
  • 450 g green cabbaqe, shredded
  • 400 g tin tomatoes
  • 1/2 tsp dried thyme
  • 2 bay leaves
  • 1.5 litres gluten free vegetable stock
  • 200 g green lentils
  • 450 ml water
  • salt and pepper
  • Fresh coriander leaves or parsley to garnish (optional)
  1. Fry onion, garlic and carrot in oil for 3-4 minutes, add cabbage and cook for 2 minutes
  2. Add tomatoes, thyme, stock and 1 bay leaf. Simmer for 45 minutes
  3. Heat lentils in 450 ml water, with remaining bay leaf, simmer for 25 minutes or until cooked. Drain
  4. Blend onion mixture
  5. Add lentils, season and garnish
I have a whole pile of recipes that have been typed out over the years and put in a folder and I am currently re-doing these and putting the successful ones on here. Hence I have no idea where this recipe actually came from. I happened to have most of the ingredients for this recipe already or I would have stuck with left overs soup. i really like this one.
