Gluten Free Green Bean Curry
INGREDIENTS
  • Cooking Time: 30 minutes
  • Servings: 4
  • Preparation Time: 15 minutes
  • 1 large onion, roughly chopped
  • Low fat cooking spray
  • 2 large garlic cloves, crushed
  • 2.5cm piece fresh root ginger, peeled and grated
  • 1 tablespoon hot curry powder (check for wheat in ingredients)
  • 1 teaspoon ground cinnamon
  • 300ml gluten free vegetable stock
  • 2 large potatoes, peeled and cut into small pieces
  • 400g can chopped tomatoes
  • 350g green beans, trimmed.
  • 200g spinach
  • 6 tablespoon low fat natural yoghurt
  • 1 red chilli, sliced
DIRECTIONS
  1. Spray a deep pan with low fat cooking spray, add onions and fry for 2-3 minutes. Add garlic, ginger, curry powder and cinnamon and cook for 1 minute.
  2. Add stock, potatoes and tomatoes, bring to the boil. Cover and simmer for 10 minutes
  3. Add green beans and spinach, cover and cook for 15 minutes or until potatoes and green beans are tender. Add salt and pepper if needed.
  4. Place in 4 bowls and spoon on the yoghurt and chillies. (if freezing, omit this stage)
RECIPE BACKSTORY
This is another recipe based on one in Slimming Worlds Free Foods A-Z. I am gradually working through this book and this was a pleasant surprise! Doesn't sound great, however actually is delicious. You may need to alter the curry powder to your taste. Serving the chillies on the side rather than included in the recipe will make the recipe easier to adapt for people who don't like heat. Enjoy
