Gluten Free Peach & Raspberry Cobler

- 5 fresh peaches cut into 1/2 in cubes
- 1 cup of fresh raspberries
- 2 tablespoons of honey
- 1 teaspoon kosher salt
- 1 teaspoon fresh lemon juice
- 1 cup old fashion oats
- 1 cup organic coconut shavings
- 2 tablespoons of honey
- 1 Pinch of kosher salt
- 2 tablespoons of coconut oil
DIRECTIONS
- 1. Peel and chop up the peaches into 1/2 inch cubes.
- 2. Add raspberries and peaches into a bowl with 1 teaspoon of the kosher salt and 2 tablespoons of honey.
- 3. Mix peaches and raspberries together and let sit for 10 minutes.
- 4. Combine oats, coconut shavings, coconut oil, salt, and mix thoroughly.
- 5. Place fruit mixture in an oven-safe dish then coat the top with the oat mixture.
- 6. Bake at 375 for 20 minutes covered then remove cover and back for 10 more minutes or until oat topping is golden brown.
