Golden Butternut Squash Soup

  • 1 tsp canola oil
  • 1 small onion, minced
  • 1 carrot, peeled and diced
  • 2 10 oz packages butternut squash thawed
  • 1 cup low fat reduced sodium milk
  • 1 tsp. nutmeg
  • Fresh ground pepper to taste
DIRECTIONS
  1. In a stockpot over medium high heat, heat the oil.
  2. Add onion and saute for 3 minutes
  3. Addd carrot and saute another 3 minutes
  4. Add butternut squash and broth and bring to a boil
  5. Add milk and simmer on low heat for 20 minutes
  6. Add the nutmeg, In batches, puree the soup in a blender until smooth.
  7. Add pepper to taste
  8. Serve immediately
