Gone Green Rice
  • 2 tablespoons butter
  • 1 bunch chopped scallions, Chopped
  • 1 bunch chopped baby spinach, Washed chopped coursely
  • 2/3cup chopped fresh parsley
  • 3 tablespoons chopped fresh marjoram
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup white rice
  • 2 cups water
  1. Melt the butter in a big pan. Add the scallions, spinach, parsley, marjoram, salt, and pepper. Sauté for two minutes. Add the rice and water. Bring to a boil. Cover reduce the heat and simmer for 20 minutes. Fluff the rice with a fork and serve.
