Good Beit Cafe Lentil (or Quinoa) Salad
INGREDIENTS
  • Cooked lentils (brown) or quinoa
  • Veggies chopped up really small: red onions, red peppers, carrots, hot pepper, radish etc. (not tomatoes or cucumbers or anything too mushy)
  • Chopped herbs: parsley, cilantro and mint
  • Chopped nuts and/or seeds (almonds, walnuts, sesame, pine nuts, flax etc.)
  • Dried cranberries
  • Lemon juice
  • Olive Oil
  • Salt/pepper
DIRECTIONS
  1. 1. Cook lentils or quinoa according to package instructions. Let it cool down.
  2. 2. Mix together the lentils or quinoa, veggies, herbs, nuts/seeds, cranberries, lemon juice, olive oil, salt and pepper (I like the proportion to be about 1:1 lentils and everything else)
  3. 3. Taste and adjust seasoning, and serve with tehina or labane
