Good Eats Pancakes

INGREDIENTS
  • 2 eggs -- separated
  • 2 cups buttermilk
  • 4 tablespoons butter -- melted
  • 2 cups Good Eats Pancake Mix
  • 1 stick butter for greasing the pan
DIRECTIONS
  1. Heat electric fry pan to 350. Heat the oven to 200.
  2. whisk the egg whites with the buttermilk in a small bowl. Whisk the egg yolks with the butter in a medium bowl. Combine small and medium bowl.
  3. Place mix in a large bowl and pour liquid on top. Mix just to combine. Batter will be lumpy.
  4. Drop water on the griddle to check temperature. If it dances across the surface it is ready. Lightly butter griddle and wipe off with paper towel. No butter should be visible.
  5. Ladle mix onto griddle, sprinkle with fruit/granola/chocolate chips if desired. When bubbles set around edges and the side down on the griddle is golden brown, flip. Cook 2-3 more minutes or until set.
  6. Serve or move to a towel lined baking sheet in the oven. Can sit 20-30 minutes in the oven.
