Gooey Chocolate Muffins
INGREDIENTS
- 2 cups flour
- 2 tablespoons cocoa powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup sugar
- 1/2 cup grated milk chocolate
- 2 eggs
- 2 teaspoons vanilla
- 6 tablespoons butter, melted and cooled
- 1 cup sour cream
- 1/2 cup dark chocolate squares
- 2 tablespoons dark chocolate chunks or chocolate chips
DIRECTIONS
- Preheat oven to 350 degrees.
- Grease or spray 15 muffin cups.
- Combine flour, cocoa powder, baking soda, salt, sugar, milk chocolate, eggs, vanilla, butter and sour cream in a mixing bowl.
- Beat for 1 minute on low until combined; turn to high and beat for 1 additional minute.
- Spoon half the batter into muffin cups.
- Place a square of dark chocolate in each cup and top with remaining batter.
- Press several chocolate chunks or chocolate chips on top of muffins.
- Bake for 15 minutes, until puffy.
- Centers will still be gooey.
- Servings: Makes 15 muffins.
