Gorgonzola Dressing

INGREDIENTS
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup buttermilk
  • 1/4 lb gorgonzola (or bleu or roquefort) cheese
  • freshly ground black pepper
  • 1 garlic clove, minced
  • 1 tablespoon onion, minced
  • 1 tablespoon prepared horseradish
DIRECTIONS
  1. Set aside half of the cheese. Put the rest of the ingredients in a blender and process until smooth. Add the reserved cheese. Pulse the blender to coarsely chop the cheese
