Grandma's Hot Milk Sponge Cake

  • 2 Eggs
  • 1 Cup Sugar
  • 1 Cup Flour
  • 1 tsp Baking Powder
  • Pinch Salt
  • 1/2 cup boiling hot milk
  • 1 Tsp butter (add to boiling milk)
  • 1 Tsp vanilla
DIRECTIONS
  1. Preheat oven 350 degrees
  2. Beat eggs on high for 5 minutes
  3. Add sugar and beat an additional 4 minutes
  4. Sift Flour salt and baking powder.
  5. Mix Flour mix into egg mix
  6. Add hot milk and lastly the vanilla.
  7. Mix and pour into a single layer 8-9" greased cake pan
  8. Bake for 25-35 minutes
  9. The top will spring back to the touch when done, or a toothpick will come out clean.
RECIPE BACKSTORY
I remember having this as a kid and thinking it was the BEST cake ever. Its actually pretty low in fat and can be substitued with Splenda.
