Grandma's Jane's PB&J Bars

  • Servings: 24 bars
  • 2 sticks butter
  • 1 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 3/4 cup chunky peanut butter
  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoon baking powder
  • 3/4 cup strawberry jelly
DIRECTIONS
  1. Preheat the oven to 375 degrees F. Spray a 9 X 13-inch dish with cooking spray and sprinkle with flour.
  2. Mix flour, baking powder, and brown sugar in a large bowl.
  3. Cut in butter with a pastry knife until it resembles course crumbs. In a small bowl, beat eggs and vanilla until foamy. Stir into flour mixture to a soft sticky dough.
  4. Spoon half of dough into prepared pan. Pat flat with greased fingers. Spread jelly evenly on dough. Drop 1/2 teaspoonful peanut butter over jelly. Drop spoonful of remaining dough over top of peanut butter layer.
  5. Bake 30 minutes or until brown.
  6. Cut into bars.
