Grandma's Jiffy Cake

  • 3 cups Jiffy mix
  • 1 1/2 cups sugar
  • 1/3 cup oil
  • 2 eggs
  • 1 tsp. vanilla
  1. Preheat oven to 350.
  2. Blend all ingredients and pour into greased tube pan.Bake for 25 minutes or until golden.
This cake recipe was the basic recipe for every cake ever made by the women in my family! Jiffy Mix was the way to go, and they will never use another brand. It's always moist and delicious. Not too sweet or heavy! This can be modified for anything from lemon cake to chocolate, and can be whipped up and ready to bake in ten minutes! For lemon cake, add ½ tsp. lemon extract. Prepare one box lemon pie filling (not pudding) and layer with batter. For a birthday cake, double or triple recipe depending on desired amount of layers and bake in round cake pans.
