Grandma's Oatmeal Cake
INGREDIENTS
- Grandma's Oatmeal Cake:
- 1 c. oatmeal
- 1 1/4 c. boiling water
- 1 stick butter
- 1 c. brown sugar
- 1 c. white sugar
- 2 lg. eggs slightly beaten
- 1 1/2 c. flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 1/2 tsp. cinnamon
- 1/2 tsp nutmeg
- 1 tsp. vanilla
- TOPPING:
- 6 Tbl butter (room temperature)
- 1/2 c. brown sugar
- 1/4 c. evaporated milk
- 1 c. chopped nuts
- 1 c. shreded coconut
- 1 tsp. vanilla
DIRECTIONS
- Preheat oven to 350ยบ.
- Lightly grease a 9 x 13 pan.
- In a large mixing bowl put butter, oats, and boiling water, cover and let stand for 20 minutes.
- Add the white sugar, brown sugar, eggs, flour, soda, salt, nutmeg, cinnamon and vanilla to the oatmeal mixture; mix well.
- Pour into the greased pan and bake 35 minutes. While the cake is baking prepare topping.
- Topping:
- Stir together butter, evaporated milk, sugar, vanilla, coconut, nuts and vanilla; spread over cake as soon as it comes from the oven.
- Put under broiler to lightly brown.
- Watch it carefully as it will burn very easily if left under too long.
